Gozitan Peppered Cheeselets Antipasto in Olive Oil

These artisan Gozitan farmhouse cheeselets are air-dried for several days in ventilated boxes called 'qannic' and subsequently processed in spiced wine vinegar and topped with crushed pepper. They are then preserved in olive oil together with sun-dried tomatoes, olives and capers to make a complete feast of antipasti.
